In honor of National Apricot Day, celebrate with a Juicy Apricot cocktail. This apricot-forward cocktail is packed full of flavor without being overly sweet. Topped with bubbly Prosecco, it will become a year-round favorite in your cocktail repertoire.
I personally think that apricots are an underrated ingredient, especially when it comes to cocktails. This stone fruit is sweet and flavorful. Plus, once you try an apricot liqueur, you’ll want to find more ways to use it because it’s so tasty!
Let’s walk through the ingredients and tools you’ll need, as well as how to make this apricot drink in a larger batch at one time.
Ingredients
To make a Juicy Apricot cocktail, you will need vodka and apricot liqueur. Any brand of vodka will do. I use the Drillaud brand for the apricot liqueur, which can be purchased at Total Wine.
Additionally, this drink is topped with Prosecco, giving the cocktail a bubbly finish that play off of the sweetness of the apricot. If you’re looking to make this drink a little less boozy, consider topping with club soda or sparkling water.
As for the nonalcoholic ingredients, the recipe calls for apricot nectar and fresh lemon juice. You can use pre-squeezed, bottled lemon juice if you’d like, but I find that fresh lemon juice gives the cocktail a more powerful citrus taste. Also pick up some dried apricots to garnish with, but that is optional.
Tools
To make this vodka-based cocktail, use a juicer to squeeze out the lemon juice. Or you can use your hands. Then you’ll need a shaker to mix the ingredients in and shake.
Use a jigger or some sort of measuring vessel to measure and pour the ingredients.
Add ice to the shaker and to the cocktail class itself. I use a rocks glass in this recipe, as well as a single, large ice cube.
To garnish, use a metal cocktail spear to place a dried apricot on the finished cocktail.
Can it be made in a bigger batch?
Can you make this apricot cocktail in a bigger batch? Yes, kind of. Every step except for pouring on the Prosecco topping can be made in a big batch and placed into individual glasses.
Simply double or triple the ingredients below and follow the same steps. Note that you may need a larger shaker to accomplish the task of doubling or tripling the recipe. Pour the mixture into individual glasses and top each with Prosecco or something bubbly.
The fact that you can big batch this recipe makes it ideal to serve at a party or when hosting. The bright orange color of the apricot nectar is sure to impress your guests too! Maybe throw a National Apricot Day party and celebrate this delicious stone fruit!
Garnishing
The garnish for this vodka cocktail is really simple, but I’m going to tell you how to jazz it up too.
Place a single dried apricot on a metal spear and place it over the top of the finished cocktail. Additionally, you could add a sugar rim to the glass.
Also consider slicing up some fresh apricots and placing them on the rim of the glass.

Juicy Apricot Cocktail
Materials
- 1 oz Vodka
- 1 oz Apricot Liqueur
- 2 oz Apricot Nectar
- 1/2 oz Lemon Juice
- 3 oz Prosecco
- 1 Dried Apricot
Instructions
- Squeeze lemon to produce 1/2 oz of juice.
- In a mixing glass, add the vodka, apricot liqueur, apricot nectar, and lemon juice. Add a scoop of ice. Shake for 30 seconds.
- Add a large, single ice cube to a rocks glass. Pour the shaker mixture into the glass.
- Add the Prosecco to the top of the cocktail. Stir if desired.
- Using a cocktail spear, pierce a dried apricot and slide it onto the spear. Place the spear on the glass to garnish.
